How would I reroute the mail server from my host, ns1.stylehosting.com and ns2.stylehosting.com, back to 1and1? I want to take advantage of the 1GB webspace :P

Change the MX records for the domain to 1and1's. This will send all mail to 1and1's mail servers, instead of where they are going now. Be sure to ONLY change the MX records if all you want is 1and1 to handle mail. Keep the name servers the way they currently are :)
This is what my cPanel says:
Hint: You must enter a FQDN (Fully Qualified Domain Name) as the MX destination.
Warning: Changing your MX to something besides mail.sobe.stylehosting.com will prevent us from managing your mail. Your email will no longer be sent to this server.
And that is a subdomain, I can choose the technominal.com or that subdomain, and of course it would be the .com domain which is hosted by 1and1. So do I just put mail.1and1.com for the domain I want?

What domain are you trying to move email for? You mentioned earlier that you only had an instantdomain from 1and1. How does stylehosting.com fit into this equation? If you point your domain email to 1and1 then you will have to most likely transfer control of the domain to 1and1 so that they will accept email for your domain.
Wouldn't you already be using the 1GB of space for your domain? Do you want to point a second domain at this account or something ....i'm not following.
Ok, let me lay it out as easily as I can:
I have hosting from a hosting company, Style Hosting (http://www.stylehosting.com). My subdomain URL with them is, http://sobe.stylehosting.com. I read in the FAQ in my 1and1 control panel that I could reroute mail servers to 1and1 mail servers if I wished to use their email services. I wish to know how this would be done.....
So basically, I want to change my mail server from Style Hosting, to 1and1. It said I could in the FAQ, but it didn't specify how. That is what I would like to know. And through cPanel like I showed above, is that what is needed? Just change the MX records from mail.sobe.stylehosting.com to mail.1and1.com?!

I looked through the 1and1 FAQ's but didn't find what you were referring to for rerouting email. Basically you can point any domain at the 1and1 email servers, the key is getting the 1and1 email servers to accept email for your domain. Normally you would use the 1and1 email servers by configuring/adding them to your control panel and then automagically they configure their mail servers to accept mail for that domain.

Once you change your DNS, 1&1 hosting features may not be usable. You can
still set up features like WebsiteCreator and in2Site Live Dialogue as a
preparatory step in case you wish to reroute your domain to 1&1 DNS settings.
Choosing your own name servers
1. If you choose your own nameservers, 1&1 hosting services are no longer
available.
2. 1&1 has no influence over your mail servers and IP settings, since these are
manifested in the name servers.
3. It is possible to reroute your mailservers to 1&1 and use 1&1 mail
services.
4. If you use your own name servers and would like to point back to your 1&1
web space via A-record, please be aware that the IPs change. Therefore we cannot
guarantee proper functionality of this arrangement.
5. Once you select another name server, we keep ours as a hidden DNS entry. This
way we ensure that your website stays online despite the propogation time.

I see your point, i'm not familiar with the instant domain product but the basics would be that you configure your domain to point to 1and1 mail servers with your MX records and then configure or get 1and1 to accept mail for your domain. Maybe that can be done in the instant domain settings but i'm not familiar with them. Might mean an email to support or a phone call.
Could you or someone tell me the exact mail server dns? Such as mailserver.1and1.com ?
